At Chiltern Lamb, I believe people should know where their food comes from and understand how it has been produced.

Our sheep are raised on grass-rich pastures, wildflower meadows and conservation grazing sites throughout the Chiltern Hills. We allow them to grow at a natural rate, without intensive feeding systems, producing lean, flavoursome meat with excellent depth of flavour.

We believe in eating less, but better quality meat. By giving our sheep time to mature naturally and managing them with high welfare standards, we are able to offer lamb, hogget and mutton that reflects both the landscape they graze and the traditional farming methods used to produce them.

Every animal is carefully reared, every cut is fully traceable, and every purchase helps support conservation grazing, rare breed sheep and the future of British farming.

Fresh Raw Steaks

Lamb

Our lamb is entirely grass-fed and allowed to grow at its own natural pace on the meadows and conservation grazing sites of the Chiltern Hills. Unlike intensive systems, our lambs are not pushed for rapid growth, resulting in lean, flavoursome meat with excellent texture and depth of flavour. Each carcass is carefully hung to mature, producing the quality local lamb that Chiltern Lamb has become known for.

Hogget

Hogget is one of Britain's best-kept food secrets. Older than lamb but younger than mutton, it offers a richer flavour and greater depth while remaining wonderfully tender. Our hogget is typically between 14 and 19 months old and is produced in small numbers each year. For those who enjoy traditional British food, hogget provides the perfect balance between delicate lamb and full-flavoured mutton.

Mutton

Mutton comes from mature sheep that have been given time to fully develop their character and flavour. Traditionally prized by previous generations, it is making a welcome return to British kitchens. Rich, deeply flavoured and perfect for slow cooking, our mutton is produced from carefully selected sheep raised entirely on forage-based diets. Given time in the oven or slow cooker, it rewards patience with exceptional flavour and tenderness.

Chops, Cutlets & Barnsley Chops

Cutlets are smaller, Chops are larger, and Barnsley chops are the biggest - a double chop cut across the bone with two ribs.

Whole & Half Lamb for the Freezer.

We supply prepared whole and half lamb boxes ready for the freezer.

A whole lamb is typically 18-22kg and a half lamb 10-12kg.
